In Sri Lanka, with variety of spices, one of the distinctive used spice Mace, the TropicalFinest Mace are made in local farms and gardens, hand picked and processed. These are pure naturally grown and Organic.

The TropicalFinest Mace are collected from rural local farmers who still use most traditional methods to cultivate and harvest these.

The local farmers collect nutmeg fruits fallen around the trees ( tropical green trees), are cleansed to remove the peel to get the nut and scarlet aril which is called mace, surrounding it.

The the nuts are sundried for several days until the kernel rattle in the shell when shaken, and untill it gets the proper color and taste, 

The Mace is made from the Netmeg seed covering (aril) which it has a reddish color on it. Once the Nutmeg fruit is ripen, the crimson color aril is removed from seed and laid down in cleaned flattern grounds or trays to dry for 10 - 15 days. 

The spice has a simlar flavor to Nutmeg  but more delicate than, it is has a bit more pungnent fragrance and warm slightly sweetness.

Mace is useful with savoury and sweet cooking, with scented sweetness and the flavour remind you the tast of pepper and citrus.

Mace and Ginger flavor have a special combination for creamy and starcy foods. And also the mace is a perfect ingredient for cooking green vegitables such as cauliflower, broccoli, beans, sprouts and custard puddings and tarts, mashed potatoes, rice, butter naans, breads and buns.

With butter, sugar (brown) and Mace give an extra delicious to the cooking yams, potatoes, spinarch dishes, pumpkins and also bread.

Some other food varieties are, Mace is used to spice up of baking foods such as cakes, fruit cakes, cheese cakes baked or unbaked, ginger and garlic bread, muffins etc.. and rice and curries, soups, sauses, fried rices and Sri Lankan unique Kottu

Bara Brith Sour, Rolls, Christmas Vege Wellinton, Coriander chutney, spicy Jams, Game Pie, Ginger Bread, Pea Soup,  Fettuccine Alfredo Squash, Baked Potatoes, Patties are some of the food recipes that normally use mace as an intregral ingredient.

And also this is an ingredient of Haggies ( Italian cuisine), pumpkin and other vegan pies and baked squashes.

And this is often used in drinks, coktails, tea, coffee and punches with some pepper to get slight sweetnes and scattered on top of the it and also used to mix in chutney, pickles and juices.

Mace butter, is some other extract taken, which can be used in praparing baked foods and also can be used as a substitute for cocoa butter.

Mace is also taken as a medical ingredient for diseases such as intestinal gas, vomiting, stomach aches and pains, nausea, diarrhea, kidney disease and treating for cancers. Thus the daily usage of mace ( 0.5 - 2 g ) may cause to increase your health conditions as other the spices does.

The essential oil distilled from mace, is used in pharmaceutical products and perfume industry.

And also Mace is one of the major ingredient in Ayurvedic and Chinese medical treatments.
